Whipped feta

180 gm Greek feta

70 gm sour cream

50 ml buttermilk

    Finely grated zest of 1 lemon, plus 1 tbsp juice

  1. For whipped feta, place feta and lemon zest in a food processor; process until smooth, then transfer to a bowl. In a separate bowl, whisk buttermilk, sour cream and lemon juice until smooth, then fold into feta mixture to combine, season with white pepper and salt to taste. Refrigerate until ready to serve.
