Kimchi Fried Rice (vegan)
  1. Heat oil in a pan and sauté the white part of the scallions with kimchi and tofu and gochujang for 1 minute.

  2. Add cooked rice, enoki mushrooms, and frozen vegetables to the pan. Cook for 5 minutes.

  3. Season with soy sauce and sesame oil.

  4. Garnish with the green part of the scallions, black sesame seeds, and nori strips.
