  1. Remove leaves from 2 mint sprigs; slap leaves between your palms to release oils and divide between 2 wine glasses.

  2. Fill glasses with ice.

  3. Pour 2 oz. St-Germain, then 3 oz. prosecco into each glass.

  4. Top off with sparkling water and stir gently to combine.

  5. Garnish each cocktail with a lime wedge and a mint sprig.
