In your tray add your curry sauce, milk, water, red onion, rice, chopped tomatoes, chicken thigh. Mix well until combined.
Cover tray with foil and place in oven for an hour at 180 degrees.
For the yoghurt sauce: in a bowl add yoghurt, chopped mint and lemon juice. Stir and season to taste.
Take tray out of the oven and enjoy!
