Add white chocolate and coconut oil to a microwave-safe bowl.
Melt in 30-second intervals, stirring until silky smooth.
Pour the melted chocolate over the cereal mixture.
Gently fold until everything is evenly coated and small clusters form.
Spread the coated mixture on a parchment-lined baking sheet.
Allow it to cool until the chocolate firms up.
Once set, break into snack-sized pieces.
