Sticky Toffee Pudding Loaf
  1. Preheat the oven to 170c fan, line a 2lb loaf tin with parchment paper

  2. Place the chopped dates into a mixing bowl along with the 1 tsp bicarbonate of soda. Cover with the boiling water, stir and then crush with a fork until slightly softer

  3. Add in the milk, lemon juice and butter, mix gently until the butter starts to break up into small smaller lumps and there are no big lumps. Add in the sugar, flour and baking powder, mix until there are no big lumps of butter and no dry pockets of flour. Don't worry if it's not a smooth batter it shouldn't be

  4. Pour into your lined tin and place in the oven for 45-50mins or until a skewer inserted into the Centre comes out clean. Leave to cool

  5. Whilst it cools, make the toffee sauce. Add the sugar, milk, butter and salt into a microwaveable jug. Place into the microwave for 30 seconds and stir, then place back for another 30mins and stir again until you have a smooth glossy sauce, you might have to do one more 30 second blast

  6. The sauce will thicken as it cools, pour over the top of the loaf and enjoy. It's GREAT with ice cream!!
