  1. Incorporate all ingredients in a stand mixer using the dough hook attachment

  2. Mix until the dough comes together and starts to pull from the sides of the bowl

  3. Add butter gradually and continue mixing until fully incorporated

  4. Perform 2 sets of stretch and folds during bulk fermentation

  5. Chill the dough for 1-2 hours or overnight in the fridge

  6. Divide the dough, shape into balls, proof and bake
