Spicy Mayo Bang Bang Chicken Skewers Brendan Pang
  1. In a bowl, combine mayonnaise, garlic, ginger, lime juice, soy sauce, sriracha, sugar, chilli flakes and salt

  2. Add the chicken and mix well until evenly coated

  3. Set aside to marinate for at least 20 minutes, or up to 4 hours

  4. Thread the chicken onto skewers

  5. Cook on a BBQ or hot pan over medium-high heat for 10-12 minutes, turning regularly, until golden, slightly charred and cooked through

  6. In a bowl, mix mayonnaise, peanut butter, soy sauce, rice vinegar and sriracha

  7. Add a little warm water to loosen until smooth and drizzly

  8. Arrange the skewers on a plate, drizzle over the sauce, then finish with chilli oil, spring onion, coriander and a squeeze of lime
