Quick Pickled Carrots
  1. In a saucepan combine the vinegar, water, sea salt and maple syrup if including. Heat it over medium heat for 4-5 minutes.

  2. Pack the carrot matchsticks into a glass jar. Cover with the hot pickling liquid, seal with a lid, and let sit for 1 hour.

  3. Transfer to the fridge and enjoy! These should last for at least 2 weeks in the fridge.

  4. Eat these before a meal for better blood sugar.
