Preheat oven to 350°F (175°C)
Mash ripe bananas in a bowl
Mix flour, baking powder, baking soda, and salt
Cream butter and sugar together
Beat in eggs and vanilla extract
Fold in mashed bananas
Combine wet and dry ingredients
Stir in shredded coconut
Pour batter into greased loaf pan
Top with golden coconut crust
Bake until golden brown and a toothpick comes out clean
