Tofu Gyros

    For serving

  1. Slice tofu and boil in a pot of salted boiling water for 1-2 minutes

  2. Mix the marinade ingredients and add the drained tofu to it

  3. Make sure all tofu pieces are covered in the marinade and let it sit for at least 25 minutes or refrigerate overnight

  4. Add the tofu in skewers and place in the air fryer at 180°C for 20-25 minutes or until lightly charred and crispy on the outside. Keep twisting the skewers around a few times and baste with remaining marinade in between

  5. Grate cucumber and squeeze out the liquid

  6. Add to yogurt and mix all the other tzatziki ingredients

  7. Thinly slice onions and add a pinch of salt and juice of ½ lemon

  8. Remove the tofu from the air fryer and slice it

  9. Warm the pita, add the tofu, some french fries, tzatziki, onions and roll it

  10. Serve hot and enjoy
