Heat ½ tbsp of olive oil in a large pot.
Add the diced onion, garlic and ginger and cook for 3-4 minutes until the onions soften.
Add the cubed chicken breast and cook for 5-6 minutes until the chicken is mostly cooked through.
Add the tomato paste and all of the spices, stir well and cook for 1-2 minutes, which helps intensify the flavors of the spices!
Pour in the chicken broth and stir well, and use a wooden spoon to scape up any bits that are stuck on the bottom of the pan.
Cover and simmer on low for 15-20 minutes, or until you are ready to serve.
Right before serving, turn off the heat and stir in the greek yogurt.
Serve over rice and garnish with diced cilantro.
