Whole30 Date Fudge
  1. Soak the dates in warm water for 10 minutes. Drain.

  2. Blend the dates and coconut milk until very smooth.

  3. Melt the chocolate.

  4. In a bowl, combine the date paste, cocoa powder, and salt. Stir to combine.

  5. Stir in the melted chocolate. It may get quite thick.

  6. Press into a lined pan (mine was 8×5″), top with nuts and cacoa nibs, refrigerate for a while.

  7. Alternately pull it all out, roll into a ball, then into a long strip, roll sections in cocoa and pecans then chop into small sections to make pseudo-Mini Medjools.
