Baked Cottage Cheese Eggs With Turkey Bacon
  1. Preheat your oven to 375°F (190°C). Grease a medium-sized baking dish with olive oil or butter.

  2. In a skillet over medium heat, cook the turkey bacon until crispy. Chop it into small pieces and set aside.

  3. In a large mixing bowl, whisk the eggs until smooth. Stir in the cottage cheese, shredded cheddar (if using), garlic powder, smoked paprika, salt, and black pepper. Mix well.

  4. Pour the egg mixture into the prepared baking dish. Sprinkle the chopped turkey bacon and green onions evenly over the top.

  5. Place the dish in the preheated oven and bake for 25–30 minutes, or until the eggs are set and slightly golden around the edges.

  6. Let the baked eggs cool for 5 minutes before slicing. Serve warm and garnish with additional green onions or a sprinkle of paprika, if desired.
