Preheat your oven to 425 degrees fahrenheit.
Finely dice your red onions.
In a bowl mix together lean ground beef, salt, black pepper, minced garlic, red onions, and onion powder.
Whisk your two eggs in a small bowl.
Dip your rice paper into the whisked eggs.
On a piece of parchment paper coated with a spray of oil, place your wet rice paper and on top and place a third of your ground beef, two green leaf lettuce leaves, and a third of your mozzarella cheese. Your filling should be placed in a long line from the top of the rice paper to the bottom, and fold over the rice paper encasing the filling and creating a long, thin log/burrito shape. Repeat this step two more times.
Cut the rice paper logs into 1 inch pieces with scissors.
Spray your pops with spray oil and place in the oven for 8 to 10 minutes or until fully cooked through and crispy golden brown.
In a bowl mix together greek yogurt, ketchup, worcestershire sauce, pickle juice, dijon mustard, garlic powder, and onion powder to make your dipping sauce and enjoy!
