Crispy Cheese Smashed Sweet Potato Pancakes + Chilli Fried Egg
  1. Prick the potatoes all over then microwave on high until tender - around 15-20 minutes

  2. Smash between two sheets of baking paper with a burger press, spatula or pan

  3. Heat a non-stick frying pan over a medium high heat

  4. Add the cheese to pan (no need for oil) in small rounds, roughly the same size as the smashed potato

  5. Top with the sweet potato, cook until golden and crispy then flip and cook until golden and crispy on the other side

  6. Do a few at a time if you have space

  7. Wipe the pan clean

  8. Heat the chilli oil over a medium heat, crack the eggs in and cook to your liking

  9. I ut a lid on or a bowl over for about 15-20 seconds towards the end to get rid of any bogey-like egg white

  10. Stack the sweet potatoes, top with the egg, creme fraiche, pickled onions, chilli crisp and chives or spring onion
