Sauté shallot in a generous amount of butter
Add garlic and a splash of white wine, let reduce
Add all of the cabbage to the pan
Boil egg noodles in a separate pot and save some pasta water
Dissolve miso paste in the reserved pasta water
Add cooked noodles to the cabbage
Add the miso mixture, plenty of butter, parmesan, and black pepper to the noodles and cabbage
Toss everything together and serve
