Chop your onion and dice the carrots.
In your slow cooker, combine the rice, broth, onion, carrots, peas, butter (if using), garlic powder, thyme, salt, and pepper. Stir gently to ensure all ingredients are evenly distributed.
Cover and cook on low for 2.5–3 hours or high for 1.5–2 hours, or until the rice is tender and the liquid is fully absorbed. Stir occasionally to ensure even cooking.
If adding pre-cooked proteins like diced chicken, sausage, or shrimp, stir them in during the last 30 minutes of cooking. Allow the slow cooker to warm them through while the rice finishes cooking.
Fluff the rice with a fork before serving. Garnish with fresh parsley or grated Parmesan cheese for an extra touch of flavor.
