Preheat oven to 500F and place a pizza stone inside to preheat for at least 30 minutes (alternatively use a baking sheet with parchment paper or cast iron skillet)
In a large bowl, mix together the flour, baking powder, baking soda, salt, greek yogurt, and sourdough discard until a shaggy dough forms
Lay the dough onto a floured surface and knead with your hands until smooth, adding 1 tbsp flour at a time if too wet
Allow dough to rest for 10-15 minutes
Place the dough on a floured piece of parchment paper and roll out into a large circle to desired thickness
Fold the edges around the circle to create a crust and gently press to seal
Lightly brush the crust and surface with pizza or olive oil
Top with desired amount of pizza sauce, mozzarella, and pepperoni
Transfer the pizza onto the heated pizza stone and bake at 500F for 15-18 minutes until cheese melts and crust is golden
For whipped ricotta: blend ricotta, heavy cream, and salt in a blender until smooth, then transfer to a piping bag if desired
Remove pizza from oven and cool for 1-2 minutes
Top with whipped ricotta, fresh basil, hot honey, and grated parmesan if desired
Slice and enjoy
