Preheat oven to 190C or 170C fan-forced.
Place all ingredients, except those for syrup, into a bowl and mix with wooden spoon until smooth.
Grease a 6-hole Texas muffin pan. Place ⅓ cup of mixture into each hole. Bake for 20 mins. Stand for 5 mins turn out onto a wire rack. Drizzle with syrup while warm.
Syrup: Mix juice and sugar in a small saucepan and cook over medium heat for 5 mins until slightly thickened.
