Quinoa and vegetable salad

Ingredients

  1. Rinse your quinoa thoroughly in a siv to remove the bitter layer then toast in a pan on medium heat with 10 grams of butter for a couple minutes, stirring frequently.

  2. After a few minutes poor in your chicken stock and let simmer for 15-20 minutes on medium heat. Turn heat to low for the remaining 5-10 minutes if your quinoa is sticking to the pan slightly.

  3. In a separate pan cook yellow and red onions and yellow bell peppers with 10 grams of butter on medium heat until onions tender slightly and have a more translucent look to them.

  4. Then add a small pinch of salt , black pepper and kucharek to the pan and mix well.

  5. Whilst everything cooks chop up small cubes of avocado and set aside.

  6. Once everything is cooked,add quinoa and vegetables into a bowl and mix to incorporate, then garnish with avocado,black pepper and salt to taste and then enjoy!

Feel free to add a drizzle of olive oil to your meal or chopped cherry tomatoes if you like!
