Carrot Loaf Cake
  1. Preheat the oven to 180°C/160°C fan and grease and line a 2lb loaf tin

  2. Mix the oil, eggs, sugar, orange zest and carrots

  3. Add the raisins, flour, bicarbonate, mixed spice, ginger, cinnamon and nutmeg and mix again

  4. Pour the mixture into the tin and bake in the oven for 55-60 minutes

  5. Once baked, leave to cool in the tin for 10 minutes, then cool on a wire rack

  6. Beat the butter on its own

  7. Add in the icing sugar and beat again

  8. Add in the cream cheese and vanilla and beat

  9. Slather the cream cheese frosting over the top of the cake

  10. Decorate with chopped nuts, carrot decorations or as desired
