Grate the zucchinis into a large bowl
Do NOT squeeze the liquid out - keep all the nutrient-rich water in the bowl
Add the chickpea flour and salt directly to the wet zucchini and mix until the flour absorbs the juices to form a batter
Place half a scoop of batter into a hot, greased waffle maker
Add a cheese cube or slice in the center of the batter
Top with the rest of the batter
Close the waffle maker and cook until golden and crispy (usually 5-7 minutes)
