3-ingredient Savory Zucchini Waffles
  1. Grate the zucchinis into a large bowl

  2. Do NOT squeeze the liquid out - keep all the nutrient-rich water in the bowl

  3. Add the chickpea flour and salt directly to the wet zucchini and mix until the flour absorbs the juices to form a batter

  4. Place half a scoop of batter into a hot, greased waffle maker

  5. Add a cheese cube or slice in the center of the batter

  6. Top with the rest of the batter

  7. Close the waffle maker and cook until golden and crispy (usually 5-7 minutes)
