Halve 5 potatoes and boil 10-15 min until fork tender
Drizzle 1 tbsp olive oil on a baking tray
Sprinkle half the mozzarella in a thin layer
Place potatoes cut-side up on the cheese and smash flat with a glass
Season with salt and your favorite spices
Top with the rest of the mozzarella
Bake at 350F (180C) for 12 min until golden and crispy
