Sheet Pan Chicken Koobideh Kababs
  1. Combine ground chicken with all the mentioned ingredients.

  2. Chop onions + parsley separately using a chopper or food processor. Do not over chop the onions- pulse until they are finely chopped and you won't have to drain excess moisture

  3. Marinate the mix for at least 2 hours and test a small piece before baking

  4. Preheat oven to 400F.

  5. Spread the kabab mixture evenly on a greased sheet pan. Use a knife or food scraper to cut them.

  6. Brush oil on top and bake for 17-20 minutes. Flip, then bake an additional 3-4 minutes. Flip again and broil for 2-3 minutes.

  7. The key is to ensure the kababs dont dry out, but all the excess liquid has evaporated. Brush oil if needed.

  8. Serve with naan, chopped salad, yogurt mint sauce, or saffron rice. Enjoy!
