Stuffed Mini Peppers
  1. Preheat oven to 350°F (175°C).

  2. In a bowl, mix the roasted chickpeas (lightly crushed), cream cheese, and fresh herbs.

  3. Stuff each pepper half with the chickpea and cream cheese mixture.

  4. Arrange stuffed peppers on a baking sheet and bake for 10-12 minutes until peppers are tender and filling is heated through.

  5. Serve warm or allow to cool and refrigerate.
