In a large bowl, combine melted butter and sugar and mix till combined.
Add in each egg and mix.
Toss in vanilla extract and mix.
Add mochiko, salt and baking powder and mix, then add coconut milk and mix till smooth.
Pour into greased muffin tins till leaving some space at the top.
Bake at 350° for 45 minutes.
Let cool 10 minutes.
Once cooled sprinkle sugar on each top and brûlée with a torch.
