  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment.

  2. In a bowl, whisk together flour, baking soda, baking powder, and salt.

  3. In a separate bowl, beat butter and sugar until light and fluffy.

  4. Add egg, vanilla, and sour cream. Mix until smooth.

  5. Add dry ingredients to wet ingredients and mix until combined. Dough will be soft.

  6. Scoop dough into balls using a spoon or cookie scoop.

  7. Place on baking sheet and gently flatten the tops.

  8. Add sprinkles if desired.

  9. Bake 10–12 minutes, until edges are set and centers are soft (do NOT overbake).

  10. Cool completely. Cookies stay soft for days!
