Hot Honey Feta Chicken
  1. In a small bowl, mix together the olive oil, lemon juice, salt, black pepper, and oregano to prepare the marinade

  2. Place the chicken breasts in a container or zip-lock bag and pour the marinade over them, ensuring they are well-coated. Marinate in the refrigerator for at least 30 minutes, or up to 4 hours

  3. Preheat your oven to 375°F (190°C)

  4. In a small saucepan over low heat, combine the honey and red pepper flakes. Warm the mixture for about 5 minutes without boiling. Stir in the apple cider vinegar and remove from heat to infuse

  5. Place the marinated chicken breasts in a baking dish and bake for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C)

  6. Sprinkle the crumbled feta cheese over the chicken breasts and return to the oven for an additional 5 minutes, or until the feta is slightly melted and golden

  7. Drizzle the hot honey over the baked chicken and feta, and garnish with chopped fresh parsley before serving
