For the tomato water, dice tomatoes, put in a strainer over a bowl, and salt. Let sit and release moisture for about 30 minutes
I used 2 tomatoes to get about ⅕ cup. The riper and larger the tomato, the more tomato water will yield.
For the bacon breadcrumbs, cook bacon on low to ensure fat is rendered.
Once bacon reaches desired crispiness, remove from pan
In the bacon fat over medium heat, toast breadcrumbs.
Remove from pan and set on paper towel to drain excess fat
To assemble salad, toss chopped romaine lettuce, bacon, tomato, and avocado with tomato ranch, top with breadcrumbs, and serve immediately
