Preheat the air fryer to 400°F.
Dredge the salmon strips in flour, then dip in the beaten eggs and coat with the panko breadcrumbs, pressing to adhere.
Spray the air fryer basket with olive oil spray. Working in batches, place the breaded salmon strips in a single layer in the basket and spray the tops with more olive oil spray.
Air fry for 8 to 10 minutes, flipping halfway, until golden brown and cooked through.
Meanwhile, make the lime dipping sauce by combining the yogurt, lime juice, garlic powder and salt in a small bowl.
Serve the air fryer salmon fish sticks immediately with the lime dipping sauce and lime wedges.
