Grate unpeeled zucchini coarsely. Finely chop onion and bacon.
Combine zucchini, onion, bacon and cheese.
Sift flour; lightly beat the eggs and add with oil and flour to mixture.
Add corn. Season with salt and pepper.
Pour into a well-greased dish and cook in a moderate oven for 30-40 minutes until browned.
Serve hot or cold for lunch or dinner
