Date Snickers Bars
  1. Line an 8x8-inch baking tray with parchment paper.

  2. Arrange the pitted date halves, cut side down, in an even layer on the bottom of the tray.

  3. Spread the peanut butter evenly over the dates.

  4. Sprinkle the chopped almonds on top of the peanut butter layer.

  5. In a microwave or double boiler, melt the chocolate chips with the coconut oil (if using) until smooth.

  6. Pour the melted chocolate over the peanut butter and almond layer, spreading it evenly to cover.

  7. Refrigerate the tray for about 1-2 hours, or until the chocolate has fully set.

  8. Once set, lift the parchment paper to remove the bars from the tray. Cut into squares or bars.
