Thai Lemongrass Cauliflower Fried Rice (thermomix)
  1. Prepare the Aromatic Paste: Place chili, shallots, ginger, lemongrass, and turmeric into the mixing bowl. Chop: 10 sec / Speed 8. Scrape down the sides of the bowl.

  2. Cook the Aromatics: Add oil and tomatoes. Cook: 5 min / 120°C / Reverse / Speed 1.

  3. Add the Tofu: Add tofu cubes. Cook: 5 min / 120°C / Reverse / Spoon.

  4. Add Vegetables and Seasonings: Add cauliflower rice, edamame, cabbage, kaffir lime leaves, soy sauce, vegan fish sauce (if using), sweetener. Cook: 6 min / 120°C / Reverse / Spoon. If excess moisture develops, remove the measuring cup and place the simmering basket on the mixing bowl lid.

  5. Finish: Add lime juice. Mix: 20 sec / Reverse / Spoon. Transfer to serving bowls and garnish with green onions, cilantro, and additional kaffir lime leaves if desired. Serve immediately.
