Smothered Chicken Salsa Verde Burritos
  1. Preheat the oven to 350 degrees F. and spray a 9x13 baking dish with olive oil spray.

  2. In a medium-sized bowl, combine the chicken, rotel, half of the cheese, sour cream, salt, and pepper.

  3. Spoon the mixture, evenly, into the center of each tortilla, roll-up, and place seam side down in the baking dish.

  4. Pour the sauce evenly over the top, using a pastry brush to get it into all nooks and crannies, then top with the remaining cheese.

  5. Bake for 25-30 minutes until the cheese is lightly golden and bubbly.
