  1. In a large bowl, combine all the meatball ingredients. Mix well and form into 18-20 small meatballs.

  2. Cook the meatballs in a pan over medium heat, turning occasionally, until browned and cooked through.

  3. In a separate pan, combine all the glaze ingredients and simmer over medium heat until slightly thickened. Add the cooked meatballs and toss until they are evenly coated in the glaze.

  4. Heat 1 tsp oil in a pan over medium heat. Add minced garlic and sauté until fragrant. Add bok choy and a splash of water, then cover and steam for 3-4 minutes until tender but still vibrant green.

  5. Place the glazed meatballs at the base of your container. Add a layer of plastic wrap over the meatballs, then place the steamed bok choy on top.

  6. Drizzle with sriracha for an extra spicy kick before serving.
