Creamy Green Linguine
  1. Add linguine to a pan of boiling water and cook for 7-8 minutes.

  2. Combine egg, pecorino, and black pepper in a bowl and whisk together.

  3. Chop broccoli into small florets, add it to the pasta along with the spinach, and cook for 2 more minutes.

  4. Drain pasta, reserving some pasta water.

  5. Add a splash of pasta water to the egg mixture and stir.

  6. Put pasta and greens back in the pan, off the heat, and add in the egg mixture.

  7. Toss everything together until combined.

  8. Put the pan back on medium heat and stir for a couple more minutes until the sauce is glossy.

  9. Finish with lemon juice, chilli, and season to taste.

  10. Enjoy with more pecorino.
