Lightly roast the spices in a pan over low heat till you get the aroma.
Let the spices cool and then grind in a spice mill or coffee grinder.
Store in an airtight jar.
Wash the pak choi thoroughly and chop it into big chunks.
Peel and cut the onion into slices.
Peel and slice or mince the garlic.
Heat a deep pan over high heat.
Add oil and let it become hot.
Add onion and stir fry till it becomes a bit soft.
Add bell pepper, garlic and ginger. Stir fry for a few seconds.
Add the green beans and chopped snow peas. Stir fry for 1 minute.
Add the pak choi and stir fry for 1 minute.
Add the stock, salt, spice blend, vinegar, soy sauce and chilli sauce.
Allow the mixture to become hot but not boiling.
Add the noodles and cook for 2 to 3 minutes or till the noodles are done al dente.
Add the bean sprouts and sesame oil. Mix well. Don't over cook the sprouts.
Add grilled tofu or protein of your choice.
Serve the soup immediately with sesame seeds sprinkled on top.
