Korean Zucchini Fritters
  1. Cut your zucchini into ¼ inch thick slices (I used a mandoline and just cooked 2 layers of zucchini at a time)

  2. Coat the zucchini slices in all purpose flour in a plate and make sure there are no uncoated spots / dust off excess flour.

  3. Beat the eggs in a bowl. Dip the zucchini slices that are covered in APF.

  4. Heat your pan over medium heat with a neutral oil. Once your pan is heated, bring it down to medium low. Cook the egg dipped zucchini slices by frying 2-3 minutes on each side or until each side turns golden brown.

  5. Transfer the zucchini fritters to a plate with paper towel lining to soak excess oil. Serve with dipping sauce (1 tbsp soy sauce, 1 tsp sesame oil, ¼ tsp sugar, 1 tsp sesame seeds.
