Twice Cooked Roast Potatoes
  1. Preheat oven to 220°C fan bake, and put oven tray / dish in oven to get hot

  2. Chop & wash potatoes, put in pot with stock, top up water to cover

  3. Par boil until ½ cooked, drain & shake to fluff edges and return to off element to dry

  4. Mix oil, dill, salt & pepper, garlic powder, onion powder, or whatever seasonings you choose

  5. Add to potatoes in pot & gently coat

  6. Pour potatoes into hot prepared tray / pan and roast for 30 minutes, turning once

  7. Season with salt to taste & serve
