Preheat oven to 425°F.
To make sauce, combine all ingredients in a small bowl and whisk well.
Add 1 tbsp olive oil to a large skillet over medium heat. Remove raw sausage from casing and break into bite sized pieces. Brown meat on all sides then remove from pan and set aside.
Add potatoes to a baking sheet or large baking dish and pour sauce over top. Toss potatoes in sauce until fully coated then roast for 20 minutes.
Remove from oven and add onions and squash to baking dish then toss veggies in sauce once again. Flip potatoes and return to oven for 20 minutes longer.
Remove from oven, add in sausage and toss everything together in sauce. Flip veggies then return to oven for final 20 minutes of cooking for a total of 60 minutes.
