Baked Mushroom Mascarpone Gnocchi
  1. Set the oven to 220C grill setting

  2. Add mushrooms, butter, salt and pepper to a small baking tray (roughly 21cm) and place under grill for 10 minutes

  3. Set a large frying pan to medium high heat and add 2 tablespoons olive oil

  4. Add the garlic, thyme and gently fry for 1 minute

  5. Pour in the stock, mascarpone and nutmeg and mix together

  6. Season with salt and pepper and taste to check seasoning

  7. Pour in gnocchi, bring to the boil and cover for 1.5 minutes

  8. Carefully pour the gnocchi mixture into the mushroom baking tray

  9. Top with breadcrumbs and grated cheese

  10. Place under the grill for 9-10 minutes

  11. Serve straight away with a plate of greens
