Preheat oven to 200C/180C fan forced. Grease a 19cm (base size) 1.5L (6 cup) pie dish.
Whisk together eggs, milk, butter and pancake mix in a large bowl. Season.
Place zucchini in a colander and use clean hands to squeeze out excess liquid. Scatter zucchini, ham, cheddar and shallot over base of pie dish. Pour over egg mixture. Bake for 40-45 minutes or until golden and just set.
Set quiche aside for 30 minutes to cool slightly before serving.
