Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Spread the ground chicken onto the parchment paper into a thin, even oval and season it however you like.
Add the marinara sauce and mozzarella to one half, making sure to leave some room around the edges.
Use the parchment paper to fold the other half of the chicken over the filling, then press the edges together to seal your pizza pocket.
Sprinkle the Parmesan over the top and gently press it into the chicken.
Bake for about 20 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
Remove the parchment paper and place the pizza pocket directly onto the baking sheet. Broil for a few minutes (5-8) until the outside is golden and crispy.
