Heat 2 tablespoons of olive oil in a pot
Remove sausage from casing and form into balls
Cook sausage for 7-8 minutes until nicely browned
Chop leeks, onion, carrot, and garlic coarsely
Add vegetables to the pot and cook for 3-4 minutes
Rinse lentils under water
Add 2 ½ cups water, ¾ cup diced tomato, lentils, 1 teaspoon salt, and ½ teaspoon pepper to the pot
Bring to a boil and simmer gently for 34-45 minutes until lentils are tender
Garnish with chives and serve
