Lentil And Sausage Stew
  1. Heat 2 tablespoons of olive oil in a pot

  2. Remove sausage from casing and form into balls

  3. Cook sausage for 7-8 minutes until nicely browned

  4. Chop leeks, onion, carrot, and garlic coarsely

  5. Add vegetables to the pot and cook for 3-4 minutes

  6. Rinse lentils under water

  7. Add 2 ½ cups water, ¾ cup diced tomato, lentils, 1 teaspoon salt, and ½ teaspoon pepper to the pot

  8. Bring to a boil and simmer gently for 34-45 minutes until lentils are tender

  9. Garnish with chives and serve
