Boil egg noodles according to package directions. Drain and set aside.
In a large skillet, heat olive oil over medium heat. Add sausage and cook until browned and crumbled. Remove from skillet and set aside.
In the same skillet, add onion and bell peppers. Cook for 5–6 minutes until softened. Add garlic and cook 1 minute more.
Stir in diced tomatoes, tomato sauce, balsamic vinegar, Italian seasoning, and crushed red pepper flakes. Simmer for 5 minutes.
Add sausage back to the pan, stir in the cooked noodles, and toss until well coated.
Taste and adjust salt and pepper. Garnish with fresh herbs and Parmesan.
