Peel & cut potatoes into fries. Spread on sheet pan, spray with oil + sea salt, then bake at 300°F for 1 hr. Chill at least 3 hrs (or up to 3 days).
Heat oil to 350°F. Toss fries with cornstarch + Old Bay, let sit 5 min. Fry 5–7 min until golden & crispy. Season with more Old Bay.
Mix cream cheese, mayo, cheddar, Old Bay, horseradish, Worcestershire, honey, hot sauce & mustard. Fold in crab meat.
Layer fries in an oven-safe dish, smear crab dip, sprinkle cheddar & extra crab meat. Bake at 400°F for 10–12 min until bubbly.
