Preheat oven to 500 degrees
Spatchcock 5 lb. chicken and season both sides
Place chicken skin side down on a pan with a rack, and let sit at room temperature for an hour
Roast skin side down for 20 minutes
Removed and rest for 20 minutes
Turn skin side up and roast for the final 20 minutes
Place chicken on counter for 10 minutes and enjoy!
