Ciambella Rustica
  1. Preheat oven to 350°F

  2. In a bowl, mix together the flour and baking powder and set aside

  3. In a large bowl, whisk the eggs for about 1 minute until slightly foamy

  4. Add the ricotta, milk, olive oil and thyme and whisk until smooth

  5. Add the flour mixture and mix until a thick batter forms

  6. Add the salami, ham, provolone, Parmigiano Reggiano and scallions and mix to combine

  7. Grease a bundt pan with olive oil spray and drop in the batter evenly

  8. Bake for 35-40 minutes until just golden
