Preheat the oven to 180°C (350°F) and grease a 9x13-inch baking dish.
In a large bowl, combine the diced potatoes, ¾ of the grated cheddar cheese, crumbled bacon, garlic powder, and salt. Stir everything until evenly mixed. Add the mayonnaise and continue to stir until the potatoes are fully coated.
Transfer the potato mixture to the prepared baking dish, spreading it out in an even layer. Top with the remaining cheese. Bake for about 1 hour and 30 minutes, or until the potatoes are tender and the top is golden brown and bubbly.
Once baked, remove the dish from the oven and sprinkle the green onions on top. Let it cool slightly before serving.
